Well, spring is arriving here. Our snow (on our yard) is nearly all melted. Woohoo! Today is actually a dreary, cloudy, rainy day. The perfect day to use your slow cooker! Dig it out, you won’t be disappointed with this Slow Cooker Chicken Taco Soup. 😉

Slow Cooker Chicken Taco Soup

Ingredients
  • 1 onion, chopped
  • 1 (16 ounce) can chili beans
  • 1 (15 ounce) can black beans
  • 1 (15 ounce) can whole kernel corn, drained
  • 1 (8) ounce can tomato sauce
  • 1 1/2 cups gluten-free chicken broth
  • 2 (10 ounce) cans diced tomatoes with green chilies, undrained
  • 1 (1.25 ounce) package gluten-free taco seasoning
  • 3 whole skinless, boneless chicken breasts
  • shredded cheddar cheese (optional)
  • sour cream (optional)
  • crushed tortilla chips (optional)
Instructions
  1. Place the onion, chili beans, black beans, corn, tomato sauce, chicken broth, and diced tomatoes in a slow cooker. Add taco seasoning, and stir to blend. Lay chicken breasts on top of the mixture, pressing down slightly until just covered by the other ingredients. Set slow cooker for low heat, cover and cook for 5 hours.
  2. Remove chicken breasts from the soup, and allow to cool long enough to be handled. Stir the shredded chicken back into the soup, and continue cooking for 2 hours. Serve topped with shredded Cheddar cheese, a dollop of sour cream, and crushed tortilla chips, if desired.

    What time is supper, Betty?? :) I sure hope the sunshine comes out soon! Are you being affected by the water at all? We're still high & dry!

    I don't think the recipe calls for draining & rinsing, but I usually do. I don't like the bean liquid, especially with black beans (too muddy looking).

    Thanks Jeanine..I usually rinse the beans for the same reason..just wondered what you had done..oh yes supper is at 6 pm..if I use your recipe the least I could do is share it with you, right?? grin
    Nope the water levels don’t bother us here..we are at a good elevation here. Glad you’re okay too.

    So glad that you gals are liking this soup. The entire family gobbled this one up. It has a nice hint of Mexican food, but it’s not hot. I guess you could make it hot if you wanted, but we liked it just the way it was. :) Apparently you can use beer in place of the chicken broth, but since it’s not GF, I didn’t bother with it.

    do you put the chicken in raw or do you have it cooked before hand…this recipe looks delishes im going to make it tomorrow and i am new to your page can;t wait to see what you post next I love to cook

    Tennille, you put the chicken in frozen, and then about 1/2 hr before you serve it, you remove the chicken & shred it before returning it back to the soup. My family really likes this soup, and just finished off a pot of it last week.

    I am so glad I made this. It is very tasty and is sure to become a regular for me. I like how much it makes and I don't think I even used all of the chicken it calls for. I think it gets better the following days. Good with cornbread, as well. Thanks again!

    Is the taco seasoning gf? I’ve not looked at them yet, but all the chili seasonings I’ve looked at have gluten in them.
