If you haven’t been lately, you should check out your nearest Bulk Barn. A while back, a trip there revealed that they are now carrying a few gluten free mixes. Namely, Cinnamon Raisin bread, Cornbread and Brownies. I had to buy some to try, and then let you know what I thought of them. (yeah, I’m always thinking of you guys)
First off, I don’t usually buy mixes. They usually contain nothing but starches, and are so overpriced, they aren’t worth it. Bulk Barn’s Gluten Free Cornbread Mix however, I need to buy more of! It contains corn meal, potato starch and sorghum flour. You had me at sorghum. All I had to add was milk, eggs & oil. VERY simple after all the times I’ve had to measure 15 different ingredients to make one simple bread. This was nice. And it baked up beautifully! I did one in an 8″ pan, and then I’ve made them again in muffin tins. I prefer the muffin tins. They taste great. And I’m not saying that they taste great for a mix…I’m saying even compared to doing a whole recipe from scratch. I’m sure you can easily add things like cheese, cayenne pepper or chopped jalapenos without a problem.
I’d give it 2 thumbs up, definitely worth giving it a try! Has anyone else had a chance to try it yet? What were your thoughts?
