We had this Quinoa and Black Bean Salad for supper last night, together with Salsa Chicken and let me tell you, I’m really looking forward to having the leftovers for lunch. Before this past summer, I’d never had quinoa (pronounced keen-wah) is like a gluten-free super food. It is loaded with protein and other vitamins & minerals. It cooks up really quickly, and depending on the seasonings used, can be mild, spicy, sweet or savoury. My  husband and I enjoy it as a side dish, and the kids are getting used to it (they seem to be potato & noodle lovers, rice and quinoa are not their favorites). This dish is good hot or cold, and can easily be doubled, so it is great to take along to potlucks or gatherings.

Some people complain of a bitter taste from their quinoa. It is a good idea to either soak your quinoa for 10 minutes, and drain before using, or rinse in a fine mesh strainer until the water runs clear. This should eliminate that problem.

Quinoa and Black Bean Salad
  • 1 teaspoon vegetable oil
  • 1 small onion, chopped
  • 3 cloves garlic, minced
  • 3/4 cup uncooked quinoa
  • 1 1/2 cups gluten-free vegetable broth
  • 1 teaspoon ground cumin
  • 1/4 teaspoon cayenne pepper
  • salt and pepper to taste
  • 1 cup frozen corn kernels (I used one small can, drained)
  • 1-15 ounce can black beans, rinsed & drained
  • 1/2 cup chopped fresh cilantro
  1. Heat the oil in a medium saucepan over medium heat. Stir in the onion and garlic, and saute until lightly browned.
  2. Mix quinoa into the saucepan and cover with vegetable broth. Season with cumin, cayenne pepper and salt and pepper. Bring the mixture to a boil. Cover, reducing heat to low, and simmer 20 minutes.
  3. Stir frozen corn into the saucepan, and continue to simmer about 5 minutes, until heated through. Mix in the black beans and cilantro. Can be eaten warm or cold.

    I like this recipe, simple and nutritious. Black beans and corn look so bold against the neutral quinoa. We eat a lot of salsa chicken in my home and have never found the right accompaniment. This salad may fit the bill nicely.

    I only found this recipe last year as well and have made it many times since. We love it! I even got my meat and potatoes mil to love it! and she hates onions! Really amazing side dish or great with grilled chicken mixed in.

    I made this last night and it is SO good! I changed the recipe and added 1 tsp of cayenne pepper because I LOVE spicy food! I’m eating this for lunch today and I’m so excited!

    This was my first time cooking with Quinoa and it was SOO easy! The grains look so cool too!
