Easy Grilled Pineapple

Easy & Decadent Grilled Pineapple | The Baking Beauties
I love desserts, but not all desserts have to take a lot of time, or be loaded with calories. I came up with this dessert for the previous dessert round of the Real Women of Philadelphia contest. The second round of desserts begins this coming week, and that is our final round of entering recipes. Then the weeks following, we wait, as the last finalists will be announced those weeks.

This Easy Grilled Pineapple is great, takes only a short while to put together, and the brown sugar & butter make the pineapple taste absolutely DELICIOUS! Enjoy!

This dessert is perfect for your summertime barbecues. With nearly no prep time, and no oven to heat up the house, it can easily be made at the end of a hot, busy summer day.
  • 4 ounces cream cheese, softened
  • 1/3 cup brown sugar
  • 1/2 teaspoon ground cinnamon
  • 1 pinch of nutmeg
  • 1 small pineapple, peeled, sliced & cored
  • 2 tablespoon butter, melted
  • 1/3 cup brown sugar
  • 2 tablespoon chopped pecans
  1. Using a hand-held mixer, blend the cream cheese, 1/3 cup brown sugar, cinnamon and nutmeg. Set in the fridge until you are ready to use it.
  2. Place your 4 peeled, cored pineapple rings on a plate. Using a pastry brush, brush one side of the pineapple with melted butter, and sprinkle with brown sugar. Flip the pineapple slices over, and repeat.
  3. With your grill preheated to a medium-high heat, place pineapple slices on the oiled grill. Grill, without moving, for 5 minutes. Flip, and grill the second side for 5 minutes.
  4. Serve Philly Grilled Pineapple on a plate drizzled with chocolate sauce, and top each slice of pineapple with 1 Tbsp of the cream cheese mixture. Top with 2 maraschino cherries (optional). Serve immediately.
  5. The top may be sprinkled with chopped pecans, and a light dusting of fresh nutmeg before serving.
