After enjoying the last few weeks of summer vacation with my family, I guess it is time for me to admit that it has come to an end. Tomorrow we have meet the teacher, and on Wednesday the kids will begin going to school for full days. That means that I also have to come to the realization that I need to start packing lunches soon. We’ve had such a laid back summer, with the kids making themselves a quick sandwich or wrap for lunch, that this will be a challenge for me again. I admit it, like many of you I’m sure, I dislike packing lunches. Day, after day, after day, you have to figure out not only what your child will eat (as opposed to send back home), but also what will still taste and look good after being in a lunch kit for the last 4 hours. That can be a huge challenge. I’m going to share a few lunch-kit-worthy recipes this week, plus share how we plan our lunches, hopefully making this dreaded task a little easier for you, and tastier for your kids.
Today’s recipe, which is so simple to make that you can even get the kids involved, is for gluten free Pizza Grilled Cheese Sandwiches. I made grilled cheese sandwiches for my kid’s lunches last year, and they really liked them. This is a very flavourful version of that. It can be made the night before, or in the morning, but you just have to be sure to let the sandwich come to room temperature before putting it in a container. I usually let it sit on a cooling rack until it has cooled, then wrap in a napkin before putting in a plastic container. If you don’t do this step, you will end up with a soggy sandwich from the humidity that will accumulate by putting a warm sandwich in a closed container. If your child as access to a microwave at lunch, they can give it a quick few seconds before lunch, but this sandwich is also great eaten cold. After all – who doesn’t love cold pizza?
- 2 slices of gluten free bread (there are many commercial brands available, or use your own homemade bread)
- 2 tablespoons softened butter
- 1/2 cup shredded mozzarella cheese
- 1 heaping tablespoon pizza sauce
- about 2 tablespoons thinly sliced and chopped gluten-free pepperoni
- Preheat a frying pan over medium heat.
- Butter one side of each piece of bread. Place one slice of bread, buttered side down, in the frying pan.
- Stir together the shredded cheese, pizza sauce, and pepperoni until well mixed. Spoon the mixture onto the slice of bread in the frying pan, being sure to press it down and spread it over the entire slice.
- Top with the second slice of bread, with the buttered side up.
- Once the bottom slice of bread is nicely browned, flip the sandwich over, and continue cooking until the second side is nicely browned and the cheese has melted.
- If packing in container to send in a lunch kit, be sure to let it cool to room temperature before placing in container. Otherwise you will have a soggy sandwich.
