As much as I want to deny it, the fact that I finished my kid’s back-to-school shopping yesterday tells me that busier days are ahead. Days of schedules, homework, and bedtimes are just around the corner. Along with those “inconveniences” comes the task (who am I kidding…the chore) of preparing quick satisfying dinners, and healthy lunches is quickly approaching too. One of the easiest meals to make, which give you great leftovers, is a roast chicken. In summer, I like to roast the chicken using the rotisserie on the BBQ, but you could prepare it on a can too (just be sure to use gluten-free beer or gingerale). If you’re short on time, you can spatchcock your chicken, which will reduce the cook time required, like I did with this Garlicky Greek Chicken.  After you’ve had your fill of roast chicken, pick the rest of the meat off of the bone, and you’re ready for tasty meals which are perfect for healthy lunches on-the-go, or quick weeknight dinners.
