It’s only the middle of November, but I’ve seen eggnog on the shelves since mid October already. I don’t usually drink a lot of eggnog during the holiday season, it’s one of those things where a little taste will do, but a lot is completely unnecessary. That’s what makes an eggnog latte so perfect. You get a little of the nutmeg and rum flavour, but it isn’t overwhelming. Since a lot of people who can’t tolerate gluten also can’t tolerate dairy, I decided to create a recipe for Vegan Eggnog Latte – you can’t get that in those red paper cups!
Vegan Eggnog Latte
A rich, creamy Vegan Eggnog Latte can be made at home!
Ingredients
- 1 cup (250 ml) Silk unsweetened almond or cashew milk
- 1 1/2 tablespoons (45 ml) coconut palm sugar or granulated sugar
- 1/4 teaspoon (1.25 ml) ground cinnamon
- 1/4 teaspoon (1.25 ml) vanilla extract
- 1/4 teaspoon (1.25 ml) rum extract
- 1/8 teaspoon (a pinch) ground cloves
- 1/2 cup (125 ml) hot, strong coffee (or two shots of espresso)
- grated or ground nutmeg, for garnish
Instructions
- Pour the almond milk, sugar, cinnamon, vanilla, rum, and cloves in a glass pint jar (500 ml).
- Place the lid on the jar to tightly seal, and shake vigorously for 15 seconds.
- Remove the lid from the jar, and microwave for 45 seconds.
- Repeat the above two steps two more times, or until the milk is hot and steamy (this will vary depending on the strength of your microwave). Remember, the jar does get hot, so use a dishtowel or oven mitt when handling it.
- Pour the hot coffee into your mug, and using a spoon to hold back the foam in the milk, pour the milk into your coffee mug. Spoon the foam on top of your drink, sprinkle with with ground nutmeg, and enjoy.
Feel free to alter the recipe by using a different dairy-free milk.
