It’s only the middle of November, but I’ve seen eggnog on the shelves since mid October already. I don’t usually drink a lot of eggnog during the holiday season, it’s one of those things where a little taste will do, but a lot is completely unnecessary. That’s what makes an eggnog latte so perfect. You get a little of the nutmeg and rum flavour, but it isn’t overwhelming. Since a lot of people who can’t tolerate gluten also can’t tolerate dairy, I decided to create a recipe for Vegan Eggnog Latte – you can’t get that in those red paper cups!
Feel free to alter the recipe by using a different dairy-free milk. Silk Canada has a great selection, whether you’re looking for almond, coconut, almond-coconut, soy, or their newest addition – Creamy Cashew milk. Cashew milk has only 60 calories per serving (33% less than skim milk), but has as much calcium per serving as dairy milk. In addition to be dairy-free, low in calories, and high in calcium – cashews are also rich in iron, phosphorus, selenium, magnesium and zinc.
Silk Creamy Cashew milk is now available in Canada! Be sure to look for while you are out doing your grocery shopping. You can even receive a coupon when you sign up to receive their newsletter. You can also find Silk Canada on Facebook, where they share news, recipes, and fun bits about their dairy-free milks.
