Crispy Potato Wedges

These yummy little crispy potato wedges are sprinkled with Parmesan cheese while they are baking. They have a really great flavour, and are a nice change from regular old fries. This recipe comes from an elementary school cookbook, which I received from Dawn in our swap. Thanks, Dawn! 🙂

Ingredients:
2 tbsp olive oil
1 tsp salt
1/2 tsp basil
1/2 tsp oregano
1/2 tsp thyme
1/2 tsp garlic powder
1/4 tsp pepper
1/4 tsp paprika
6 medium potatoes, cut into wedges (I used russets)
1/4 cup Parmesan cheese, optional

Directions:
In a bowl, combine oil & seasonings. Add potato wedges and stir to coat. Arrange in single layer on an ungreased baking sheet (I lined mine with aluminum foil for easy clean up). Bake, uncovered, at 450 degrees F for 15-20 minutes. Sprinkle with cheese and bake an additional 10 to 15 minutes or until tender crisp.
