I love simple recipes for bars or squares, simply because it takes less time than making cookies. You just put it all into the baking pan and put it in the stove. No more work needs to be done, you don’t have to change out pans, let things cool, etc. Just mix it, dump it, bake it, and go about your day.
Brownies are usually my go-to recipe for some quick bars. I have tried making gluten-free Blondies before, but they never seemed to turn out quite the way I envision them. But, I have finally done it. In my family’s mind, these were the PERFECT Blondies. Sweet, crisp, chewy, fruity, crunchy, and nutty all in on square that held together well, but wasn’t doughy or gummy. Yes, Blondie perfection.
Gluten-free Cherry Chocolate 'n Nut Blondies

Ingredients
- 3/4 cup sorghum flour
- 3/4 cup brown rice flour
- 1/4 cup cornstarch
- 1/4 cup potato starch
- 1 teaspoon xanthan gum
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup chopped walnuts or pecans
- 1/2 cup chopped dried cherries
- 2/3 cup oil
- 1 1/2 cups brown sugar
- 3 large eggs, beaten
- 1 tablespoon vanilla extract
- 1/2 cup semi-sweet chocolate chips
Instructions
- Preheat the oven to 350°F. Lightly grease a 9x13-inch baking pan.
- In a large mixing bowl, whisk together the flours, starches, xanthan gum, baking powder, baking soda, salt, nuts, and dried cherries. Set aside.
- In a small mixing bowl, whisk together the brown sugar and oil. Add the eggs and vanilla; whisk to combine.
- Pour the wet ingredients into the dry ingredients, and stir until no lumps remain.
- Pour batter into the prepared baking pan, leveling the batter with a rubber spatula. Sprinkle the chocolate chips evenly over the top.
- Bake in preheated oven for 22-27 minutes, or until a toothpick inserted into the middle comes out clean. Cool completely before cutting into squares.
Yesterday, Julia Child was celebrated across the foodie world. It would have been her 100th birthday yesterday. With all that she gave home cooks, she is worth celebrating. Until I became interested in food, I never really gave the oddly tall woman with a weird voice much of a second thought.
But, since reading “My Life in France“, I totally admire this woman. She was determined, and she worked on her techniques and book until everything was totally perfect. Anything short of perfection was not good enough for her. If you have the chance to read “My Life in France”, please don’t pass it up, she was a really interesting lady with a rather fascinating life.
With all of the posts, pictures and quotes that I saw on Facebook, this is the one tribute that sticks with me, and makes me smile. Julia truly was an amazing “founding-woman” to all of us foodie bloggers. Happy Birthday, Julia!
