Jeanine I really wish you all the best luck! These cookies look delicious and the chocolate ginger coffee flavors seem to go well together. I like that the ginger makes the flavors “pop” so well together. Good luck!

For some strange reason I like to bake Sunday afternoons or in this case it stretched into the evening. I made the Zippy Chippy cookies because the flavours are the same as our family favourite we make at Christmas. As all my baking has oat flour I subbed some of the brown rice flour. They taste great but they did not crack the way yours did. I think the oat flour absorbs more moisture than the rice flour so I should have possibly cut back on the oat flour. Your thoughts?

I’m thinking you could have probably decreased the flour amount a bit when using oat flour – the dough may have been a little too thick for it to crack when baking.
