These are something different to throw on the grill tonight. Why not give them a try?

Ingredients:
1 Tbsp margarine
1/3 cup finely chopped onion
1 egg white
1 tsp paprika
3/4 tsp salt
1/8 tsp pepper
1/8 tsp garlic powder
1 lb lean ground beef
onion chunks
cherry tomatoes
mushroom caps
pepper chunks
NOTE: I used only onion and peppers.
Directions:
1. Melt margarine in frying pan. Add onion. Saute until soft, cool.
2. In large bowl beat egg white, paprika, salt, pepper and garlic powder together lightly until blended. Add onion. Add ground beef. Mix and shape into 1 in. balls.
3. Thread onto skewers (pre-soak wooden skewers 30 min.) alternating with vegetables.
4. Cook on medium-hot grill, turning often, until well done. About 20 min total cooking time. Brush with cooking oil occasionally
Makes 40 meatballs.

Thanks for this great site. I just made meatballs with 3 pounds of ground beef and it yielded 28 meatballs about the size of a golf ball. How are you able to get 40 meatballs from this recipe?
