I get contacted occasionally to test out new cookbooks. I enjoy this little perk of blogging, because it gives me a chance to see what is out there, and lets me give YOU my honest opinion of a book. You never know. Sometimes I am pleasantly surprised when I get a new cookbook. Enters Roben Ryberg‘s new cookbook “Gluten-Free in Five Minutes“.
I will admit to you, I was very hesitant to try this book. I flinched a little when I read the words “Make ‘Em in Your Microwave”. Not much good has ever been baked in the microwave, much less good AND gluten-free. But, I tried it. And?
I enjoyed some Gluten-Free Red Velvet cake…mixed & baked in about 5 minutes. Seriously. (I was out of red food colouring though, hence the lack of red). This cake was really very delicious, the texture was really good, and it was a nice late night dessert on the deck for my husband & I to share.
Then…
I had some cornbread, also ready to eat in about 5 minutes. And you know what? I’d make it again! If I were having something like chili for supper, and everyone else had their own bread to eat it with, I’d make myself a little cornbread. Really good warm, not quite as great cool, but hey, what do you expect with 5 minute & a microwave? I was quite happy that it was so good warm.
Oh yeah, there’s more…
You see the above? They are gluten-free blueberry muffins, made in the microwaveย one morning. Yes, they look a little off, but you know what? They tasted good! I actually preferred them once they had cooled, as opposed to warm.
Ok, I thought, I’ve had cake, cornbread, and muffins. And I have been surprised by all of them. I know what my readers really want to know…can you REALLY make a single gluten-free hamburger bun in 5 minutes? One that tastes good? My answer for you?
Absolutely! I really do not know how Roben does it. She’s amazing, and has totally gained my respect. This hamburger bun was really, really good. Moist, but not wet & spongy. Not crumbly, but not rubbery. I did not eat mine with a burger, instead I topped it with some honey and ate it that way. I shared it with my husband, even he was amazed (he’s not on a GF diet, btw). And you know what? I think we’ll be having burgers tonight for supper, and I will be having mine on a bun!
There are 4 hamburger bun recipes in the book, each is a little different. She tells you the differences in each recipe’s description. This one is more spongy, or this one is more moist. This one tastes like whole grain, etc. Helpful information! Plus, most recipes use only one flour. And you can pick which recipe will work best for you, based on what you have on hand.
Here are some tips from Roben Ryberg herself:
Two tips for baking with Gluten-Free in Five Minutes: 1. Beat egg until nearly uniform in color (or beat your batter well if you forget to beat the egg well) and 2. Remember that each microwave is different. If yours is very powerful, you will need to cook your food item less. If your microwave is not so powerful, you will need to cook your food item more. A 15 second adjustment in time is usually all it takes!

Ingredients
- 1 large egg
- 1/2 tablespoon canola oil
- 1 tablespoon applesauce
- 1/16 teaspoon salt
- 1 tablespoon cornstarch
- 1 tablespoon cornmeal
- 1/2 teaspoon baking powder
- 1/2 teaspoon sugar
Instructions
One thing to keep in mind…the microwave will not brown your food for you the way a skillet (in the case of pancakes, which are now on my ‘must try’ list) or oven will. If you want the tops of the buns or muffins to be slightly browned (which will just make for better visual appeal), feel free to pop the item in a toaster oven or oven for a few minutes.
Do I recommend it? Yes. Absolutely. Right now on Amazon her book is selling for less than $12, which I think is a real steal. If you’re looking for a recipe book with quick, easy recipes, give it a try. I can not vouch for all of the recipes, but I tried 4 of them, and they were all really quite good.
The book includes other recipes like English Muffin, Sandwich Bread, Pizza Crust, Stuffed Mushrooms, Lemon Poppy Seed Pound Cake, Extreme Chocolate Cake, Pineapple Upside Down Cake, a section on Icings, Chocolate Chip Cookie Bars, Banana Bread, and Raspberry Cobbler. 123 recipes in total. Wow.

I don’t actually own a microwave, but I would get one if it meant 5 minutes to gluten free baked goods. I’d use my bun to make a BLAST – Bacon, Lettuce, Avocado, Sprouts and (heirloom) Tomato.

The cookbook looks fantastic. I usually do not use a bun, but would love an easy recipe. I am the only one gluten free, so it cost to much to buy bread that I only use. This way I could make a bun for me as well.

Wow this book would be awesome for my sister. She is a single mom with celiac disease and she doesnt like to take the time to cook and bake stuff for herself. She could use this time saving recipes to make stuff for herself while making meals for herself and her daughter. I love trying new recipes and making gluten free treats for her. We are always having family bbqs together and this bun recipe would be perfect when we try a new recipe I found for bbqed turkey burgers with lettuce, tomatoes and sweet potato chipolte cream sauce! I would make a straightforward BLT because right now is the peak of tomato season and I have all these delicious heirloom tomatoes. I’d probably use the golden jubilee tomato or the black brandywine. The recipe looks awesome!

Im not so sure of the cornmeal in the burger bun. Cornmeal in my sandwich bread is not my “thing”. That said, I think I’d try it with a turkey burger! The first two photographs of yours almost got me convinced that I need to buy this book though. I would totally make chocolate cake and corn bread. Awesome review!

I’d use a single recipe to make two smaller buns. Then I’d make little hamburgers for my 3-year-old celiac twins. They prefer just meat and ketchup–lots of ketchup.

I own a microwave I have wondered if GF baking could be done in the microwave. This book would help solve my problem I am a full-time student and donโt have the time to bake. I would use it to for all my baking. I live in Texas and it has been over 100 degrees for 2 months and counting. I really miss home baked items. I have been making and eating things that don’t require using my stove because it makes my house hotter.

This cook book would be soooo awesome for me. It is a toss up for me of what I would make first – either a grilled cheese sandwich OR a Brazilian X-tudo – hamburger patty, egg (cooked in the form of an omelet), bacon, cheese, tomato, lettuce, canned corn and potato sticks! Sounds weird but don’t mock it til you try it! You can also add mayo and ketchup. mmm

One side of the bun is slathered in butter, the other side is slathered in mayo which has been mixed with cilantro, ground pepper and lemon juice. Then you put on a baked chicken breast and slices of fresh cucumber, and slice on the diagonal.
Sandwiches are always better cut on the diagonal. Corner to corner!

I just found out about this website last week! I was searching for cinnamon buns and found this amazing blog! I’m so excited! I just found out at the beginning of the year I am gluten intolerant and I was pretty sure I would never have yummy biscuits or rolls (which is a MUST in the south)! Now I have made myself some yummy desserts and breads! Can’t wait to try other stuff!
This book sounds amazing! What is extra great is I can just make one or two so quickly! I cook for just myself so it is always rough having to make a huge batch of something and freezing it. This would really help!
If I had a hamburger bun right now I would make a beef patty with strips of cayenne crusted bacon, bleu cheese crumples, mixed greens, a slice of tomato, and bleu cheese dressing (I love bleu cheese)!

What an awesome sounding cook book! Our favorite way to eat hamburgers is to grill them and top with minced garlic, pepper jack cheese, and pineapple ring. That’s what I would use the bun for! Yummy!

Made this bun several times now…. using banana instead of applesauce. I may freeze some applesauce in ice cube trays for this recipe. Still not too sweet… Easy! Have to agree with topping it with a bit of honey as a treat. After 5 years I have gotten used to burgers without buns … just wrapped in a lettuce leaf!
