This Easy and Delicious Ranch Parmesan Chicken was simple to put together, and even good enough to make when company comes over. 🙂 By using gluten-free bread crumbs, this is a dish that Celiacs can enjoy as well. Top this with some spaghetti sauce & a slice of mozzarella cheese during the last few minutes of baking, and you’ll have a wonderful, flavourful gluten-free Chicken Parmesan.
Easy and Delicious Ranch-Parmesan Chicken
This Easy and Delicious Ranch Parmesan Chicken was simple to put together, and even good enough to make when company comes over.
Ingredients
- 6 boneless skinless chicken breasts
- 1 cup dry gluten-free breadcrumbs (or finely crushed Chex or gluten free crispy rice cereal)
- 1/4-1/3 cup grated Parmesan cheese
- 1 teaspoon seasoning salt
- 1/2-1 teaspoon ground black pepper
- 1/2-1 teaspoon garlic powder
- 1 cup gluten-free ranch salad dressing
Instructions
In a resealable plastic bag, marinade chicken breasts in ranch dressing for at least half an hour.
Set oven to 400° degrees (set oven rack to lowest position).
Lightly grease a 13 x 9-inch baking dish.
In a shallow bowl mix together the dry breadcrumbs with Parmesan cheese, seasoned salt, black pepper and garlic powder.
Remove chicken from marinade, allowing any excess to drip off.
Coat in the breadcrumb mixture.
Place in a single layer onto a greased baking sheet or line with non-stick foil (do NOT bake in a smaller baking dish or the bottom of the chicken will be soggy).
If desired you can sprinkle black pepper over the chicken pieces.
Bake uncovered for about 30-35 minutes or until the chicken is cooked).

Yummy–do you make your own gf breadcrumbs? I bought some at Whole foods awhile ago and they were so expensive!
Jeanine says
I make my own crumbs, Sophie. I wish there was a Whole Foods around here, sounds like they have a lot of gf products available.
Whenever a loaf gets a little too old, or flops, or seems too fragile, I throw it in the food processor and make some crumbs. I store those in the freezer in a Ziplock bag until I need them. HTH!

Well in addition to finding a fabulous looking recipe to try I have also learned something at your blog – I didn’t realize that’s all you have to do to make breadcrumbs!
Thank you. 🙂

Yep, it really is that simple, Elizabeth! A great way to use up that loaf of bread that flopped or got dried out. 🙂 And this recipe ROCKS!! I can’t wait to make it again.

This chicken recipe was super moist and really yummy, oh, and very easy! I used our leftover cornbread muffins for the gf bread crumbs.

There you go…thumbs up from the Smith Family. 🙂 So glad to hear that you guys liked it, and a great idea to use up leftover cornbread too! Thanks!

this recipe sounds delicious – but i did notice an “error” of sorts. rice krispies are *not* gluten free – they contain malt syrup. the kellogg’s site clearly states that these are not gluten free. as a highly-sensitive celaic’s, these are definetly off-limits. there are gf options for crisped rice cereal, but not the brand name ‘rice krispies’.

You are right, Sarah. Thank you for catching that. This recipe is 9 years old, so I may have missed mentioning it. However, you can still buy gluten free Rice Krispies in Canada. But the general Rice Krispies are not gluten free.
