We are down to the last 3 days of school for my kids, so that means that summer is nearly about to officially begin at our house. That means long, lazy days. Splashing in the pool. Playing with neighborhood kids. Not following a schedule, for the most part. And eating food that takes minimal time to prepare, either on the grill or ‘no-bake’ treats. Theseย Frozen Blackberry Key Lime Yogurt Pops are about as easy as it gets. And, thanks to the Greek yogurt and cream cheese, they are so creamy that they quite easily can be used a dessert. However, the kids wouldn’t ever turn them down in the middle of the morning, afternoon, or evening either.
All week I will be sharing recipes for frozen treats with you, as well as hosting a giveaway so that you can make your own frozen pops this summer too. Be sure to sign up to receive new recipes in your inbox, and for our monthly newsletter, so you will never miss a recipe or giveaway.
Frozen Blackberry Key Lime Yogurt Pops
Key Lime Greek yogurt makes these pops super rich & creamy. Freeze for at least 4 hours, or overnight. To store frozen pops, remove from mold, wrap individually in plastic wrap, and place in a resealable plastic bag.
Ingredients
- 1/2 pint (6 ounces) black berries
- 4 ounces cream cheese, softened
- 1 Tablespoon honey
- 2 cups Key Lime Greek yogurt (I used Oikos Greek yogurt)
Instructions
- Purée blackberries and strain to remove all the seeds. To the seedless purée, beat in the softened cream cheese and honey.
- Stir in the Key Lime Yogurt, leaving the mixture swirled.
- Spoon into frozen pop molds or paper Dixie cups. Insert wooden stick and freeze for at least 4 hours, or overnight.
- Run molds briefly under warm water to release pops.Enjoy!
Now you can enter to WIN a Summertime prize pack, so you can make your own frozen pops too!
One winner will win a Norpro Ice Pop Maker, 200 Wooden Treat Sticks to get you going, and either “Top Pops” by Emily Zaiden, a book with 55 all-natural frozen treat recipes OR “The Everything Guide to Living Gluten-Free” written by me.
I bought myself these items, and will provide them to ONE lucky winner in either the US or Canada. I’ve begun using the ice pop maker a few weeks ago, and LOVE it. I love the classic look, the lid that hold the wooden sticks in place, and the size of the pops, similar to store-bought pops. Plus, since the pops use wooden sticks instead of plastic ones, you don’t have to wait until you’ve eaten them all before making another batch. The book, “Top Pops,” contains 55 simple recipes for you to make frozen treats at home. Not only is there a variety of recipes, but they can also serve as a great starting point for creating your own recipes. You have the choice of either the “Top Pops” book, or the book that I wrote while sitting beside the pool last summer, “The Everything Guide to Living Gluten-free.”
*Open to residents of Canada & the US. Enter each day to win, contest runs from 7:00 a.m. Monday, June 24th until 11:59 p.m. Sunday, June 30th. One winner will be selected using random.org.
