Grilled Chicken Breast with Barbecue Glaze

The perfect end to a summer day is taking part in a great barbecued supper. I think I like the fact that grilling doesn’t warm up the house, and there are very little dishes that need to be washed. I like to marinade all my meats in resealable plastic bags. Just put all the marinade ingredients into the bag, seal it and squeeze it with your hands to mix the ingredients together. Then add your meat, seal it, and let it marinade. When I’m finished with it, I just toss it in the garbage. Easy clean up!

Ingredients:
4 chicken breast fillets
1/3 cup gluten-free barbecue sauce
1 tbsp. honey
1/4 cup mayonnaise (I used Light Miracle Whip)
2 garlic cloves, crushed
2 tsp. fresh ginger, grated

Directions:
1. Combine sauce, honey, mayonnaise, garlic and ginger.
2. Add chicken fillets to bowl and toss until well coated with the marinade. Cover and refrigerate for 3 hours or overnight.
3. Put chicken on oiled grill plate and bbq for approximately 5 minutes each side (longer if using large breasts), brushing occasionally with the marinade.

NOTE: I like to reserve some marinade before placing the chicken in it. I do not like to baste with marinade that has been in contact with raw chicken.
