First, let me say this…my kids actually ate these Porcupine Meatballs!! They’re not very fond of meatballs, and definitely not rice, but they actually asked for seconds of this. Pretty cool, huh? That right there makes this all worthwhile. 🙂
These porcupines are like meatballs that have rice mixed in with the ground beef. They were moist and flavorful. Since everyone seemed to like them, I will definitely make these again.
Porcupine Meatballs
These Porcupine Meatballs are like meatballs with rice in them, cooked in a creamy tomato sauce
Ingredients
- 1 1/2 lbs ground beef
- 1/2 cup uncooked white rice
- 1 onion, chopped fine
- 1 large egg
- 2 slices gluten-free bread crumbs soaked in 1/2 cup milk
- salt and pepper
- 2 tins gluten-free tomato soup
- 1/2 cup whipping (heavy) cream
- 3 bay leaves
Instructions
Combine beef, rice, onion, egg, bread, milk, salt and pepper. Form into 1 1/2-inch meatballs and place in greased casserole dish.
Combine soup, cream & bay leaf. Pour over meatballs.
Bake, covered, at 350 degrees F for 1 hour. Serve with mashed potatoes.

Do you can your own tomato soup or make it fresh when you need it? A GF source for tomato soup would be nice! I have been using a PC Blue Label prepared soup (in carton)lately, but it has herbs in it which don’t always go with the recipe I am using the soup in.
These meatballs look great, by the way!

Iris, I do can my own tomato soup in fall. I have been doing it for a few years, and this year, when I found out I can't have the good ole Campbells soup, I was happy to know I could still use my own. I haven't found a gf tomato soup yet, but I know that the Campbells tomato & basil is GF. But, for mushroom soup, No Name (from Superstore) Low Fat (Fat Free?) cream of mushroom soup is GF, so that should open up a number of recipes as well. Why, oh why, does tomato soup need wheat in it, huh??

I made this tonight and it was a winner. I am in Australia and a coeliac. The only canned tomato soup that I can eat (that is stocked in Oz) is Amy’s Kitchen. I am pretty sure this is a USA brand so it may be more readily available over there. I used 2 cans of this for the soup component and it is lovely. I will cook this recipe again.
