First off, I don’t usually buy mixes. They usually contain nothing but starches, and are so overpriced, they aren’t worth it. Bulk Barn’s Gluten Free Cornbread Mix however, I need to buy more of! It contains corn meal, potato starch and sorghum flour. You had me at sorghum. 🙂 All I had to add was milk, eggs & oil. VERY simple after all the times I’ve had to measure 15 different ingredients to make one simple bread. This was nice. And it baked up beautifully! I did one in an 8″ pan, and then I’ve made them again in muffin tins. I prefer the muffin tins. They taste great. And I’m not saying that they taste great for a mix…I’m saying even compared to doing a whole recipe from scratch. I’m sure you can easily add things like cheese, cayenne pepper or chopped jalapenos without a problem.

The Bulk Barn GF Cornbread mix kicks the can across the street. We bought some today, and forgot the red recipe card. Thanks for posting the pics with the card included. It came in very handy and averted a possible disaster.

I buy this mix all of the time…and it's always perfection. I made it in a square pan the first time, but, have made it in muffin loaf pans ever since. Delicious both ways. Delicious warm or cool. Goes well with breakfast, lunch or supper. A definite winner and keeper! 🙂 🙂 🙂

I second that! We love love love the brownies, and yep, they got me at sorghum flour. I really try to avoid mixes that start with rice flour and make most of my own gf goods from scratch – no longer the brownies though!
Next we'll try the raisin bread.

We just got a bulk barn in saskatoon, I love the cornbread mix. Have you tried the cinnamon raisin bread mix? I am hesitant to buy it until I hear things about it…

OK, forgot to report on the raisin bread – my husband likes it! Likes the fact that it has flavour, as opposed to my regular bread ;).
And the brownie mix is extra good if made with Almond Joy's chocolate milk…. mmmm mmmm good!

Patti, I had to bake it for quite a while, I did finally get it done. That's the main reason I prefer doing muffins instead of one 9" cake. I think it may have been about 35 minutes?

I also love this mix, I add a few shakes of cinnamon to mine, I like it that way 🙂 Adding cheese is an interesting idea though, might have to try that. This bread is an awesome accompaniment to a hearty stew or soup. I also agree that they are best in muffin form.

I just used it with apple sauce, an egg and canned corn and made corn fritters. It worked great and they taste fantastic!

Both my daughter and granddaughter have gluten allergies so being the baker in the family I try out different recipes for the girls. I tried the Bulk Barn Cinnamon Raisin bread I must admit it is one of the better bread mixtures/recipes, I added more raisins and more of the dry ingredient to the mix for a thicker consistency. The only thing I can see is it is lacking in the actual cinnamon taste. Will add some in the future and let you know how it comes out.
