Easy Turkey and Broccoli Stir Fry (gluten free)

Think quick! What’s for dinner? I’ve been caught coming up with an answer to that question at 5pm way too often. But today the answer is simple – Easy Turkey and Broccoli Stir Fry.

When you only have half an hour until soccer practice, swimming lessons, or whatever other activity pulls you out of the house for the evening, you don’ t have to think that stopping at a drive through on the way there  is your only answer. Stir fry is so easy and quick to put together, with readily available ingredients, that there is no reason to think that take-out is the only option. You can make a healthy meal for your family in a matter of minutes. If you’re still short on time – put it in these fun take-out containers and let the kids eat on the way.

Feel free to switch up the veggies based on what you have in your fridge too. I think some chopped zucchini or carrots would make great additions, and if you don’t have a red pepper, green, yellow, or orange would work just as well. Although I served this stir fry over rice, you can also serve it over rice noodles – whatever your family prefers.
