A friend I know has a serious thing for chocolate cake. Let me rephrase that…chocolate cake with lots of icing. 🙂 Although these little cake-in-a-mug desserts do not have icing on them, they were pretty good topped with vanilla ice cream and caramel sauce.
These Gluten Free Chocolate Cake in a Mug did bubble over a bit when baking, but since I had a saucer under the cup, it wasn’t a problem. No cake actually reached the bottom of the mug, so the plate was still clean. The cake does rise up a lot when baking, and then falls once you take it out of the microwave. I am wondering if adding baking soda or baking powder would make a difference…anyone know??
This cake does make enough to serve two people (only if you want to share), and only takes 5 minutes to make. Why not mix up a mug full and share it with your honey for Valentine’s Day. I think it’d be cute topped with some whipped cream and cinnamon as well.
Gluten Free Chocolate Cake in a Mug
Variations: In the bottom of another mug, place 2 Tbsp jam. Mix the cake up and pour over the jam. When cooked, tip out for a chocolate dessert with jam sauce topping. Make as for jam variation but leave out cocoa replacing it with same amount of rice flour. Add grated orange rind to mixture.
Ingredients
- 2 tablespoons rice flour
- 2 tablespoons tapioca starch
- 1/4 teaspoons xanthan gum (optional, I left it out)
- 3-4 tablespoons granulated sugar (depends on how sweet you want it)
- 2 tablespoons cocoa powder
- 1 large egg
- 3 tablespoons milk
- 3 tablespoons oil
- 1/4 tsp vanilla extract
- 1/4 tsp instant coffee powder (optional, I did this, and YUM! Mocha!)
Instructions
In a mug, add dry ingredients and mix well.
Add egg, mix thoroughly.
Add milk, oil and vanilla, mix again.
Cook for 3 to 3 1/2 minutes in the microwave. Cake will rise over the top of the mug.

Yay, I have got to try this! This would be the perfect desert for me, since I'm the only one in my family who doesn't eat gluten (or at least is willing to stay off it) and it is hard sometimes to cook all those things for just one person. Thanks!

This recipe rocks.
I used bobs red mill all purpose GF flour for mine and it worked fantastic.
I also wanted to make a plain yellow cake so instead of cocoa I used one tablespoon of bobs mix and another tablespoon of sugar.
It made it exactly like pound cake/short bread so I'm definitely going to be making this for the summer … Strawberry shortcake!!
I'm wondering if anyone has tried making a quick biscuit/non sugar version? I would be cool to be able to make a super quick biscuit on the spot! (like when gluten eaters have ready made rolls, etc)

Mmmmmm! This is the best! I made it twice in two days, just for me. I hadn't had cake in awhile. I also made one for my roommate, who is not gluten intolerant, and she loved it too. I used Pamala's all purpose flour since I always have it on hand. So good. Thank you!

Do you think it could be baked in the oven? I don’t have a microwave, and I don’t really have a desire for one, other than for mug cake, so it doesn’t seem like a good investment. Haha
