I don’t know about you, but I know that I am an emotional eater. Like, any emotion. Happy occasion – let’s celebrate with food! Sad occasion – let’s console with food! No matter what the emotion, one of these Chocolate Fudge doughnuts are the answer.
I’m going to be honest with you guys – I’ve been feeling the “blogger blues” lately (hence, the doughnuts.) I’ve been blogging for 7 years now and throughout that time, I have times when I’m really fired up about writing and developing recipes, and times when I get frustrated with myself and I feel I should be able to do better than I am. Better pictures. Better writing. Better social media presence. Better bookkeeping (just finished doing our taxes. Again –> the doughnuts.) There are so many different hats that a food blogger wears, sometimes it just gets overwhelming, and you feel like you are a jack of all trades, but a master of none.
Through my “blogger blues”, I decided to force myself to make an easy, delicious treat to share with you guys. Although I was really close to just dipping my spoon in the PB container followed by the chocolate chip bag, I decided to go for something a little more blog friendly. I hope you guys take a few minutes out of your day to enjoy these rich, fudgy chocolate doughnuts. They were a much needed treat after a long week. If peanut butter isn’t your thing, I’m not sure we can be friends, I am sure they would be great with a chocolate glaze as well.

Gluten Free Chocolate Fudge Doughnuts with Peanut Butter Glaze
Indulge yourself with one of these decadent Gluten Free Chocolate Fudge Doughnuts with Peanut Butter Glaze. Baked, and ready to eat, in less than 30 minutes.
Ingredients
Chocolate Fudge Doughnuts:
- 1/2 cup (60g ) gluten-free (pure) oat flour
- 1/3 cup (73 g) brown sugar
- 1/4 cup (33 g) sorghum flour
- 3 Tablespoons (23 g) cocoa powder
- 3 Tablespoons (24 g) tapioca starch
- 1 teaspoon (5 ml) baking powder
- 1/2 teaspoon (2.5 ml) xanthan gum
- 1/4 teaspoon (1.25 ml) salt
- 1/4 cup (57 g) unsalted butter
- 1/4 cup (48 g) semi sweet chocolate chips
- 1/2 cup (125 ml) milk
- 2 large eggs
- 1 teaspoon (5 ml) pure vanilla extract
Peanut Butter Glaze:
- 1/2 cup (63 g) confectioners' (icing) sugar
- 2 Tablespoons (30 ml) smooth peanut butter
- 2-3 Tablespoons (30-45 ml) milk (enough to make the consistency you want)
Instructions
Chocolate Fudge Doughnuts:
- Preheat the oven to 350 degrees F (177 degrees C). Lightly grease a 6 cavity doughnut pan.
- Whisk together the oat flour, brown sugar, sorghum flour, cocoa powder, tapioca starch, baking powder, xanthan gum, and salt in a mixing bowl.
- Place the butter and chocolate chips In a microwave safe bowl. Heat, in 30 second intervals, stirring after each 30 seconds, until the chocolate and butter are just melted. Whisk in the milk followed by the eggs, and vanilla.
- Pour the wet ingredients over the dry, and stir to combine.
- Spoon the batter into a large resealable bag. Cut a hole in one of the corners of the bag, and pipe the batter into the prepared doughnut pan.
- Bake in preheated oven for 12-14 minutes, or until the top of the doughnut bounces back when gently pressed on.
- Let the doughnuts sit in the pan for 5 minutes before removing them to a wire cooling rack.
Peanut Butter Glaze:
- Stir together the confectioners' sugar, peanut butter, and enough milk to make the glaze the consistency that you want. A thicker glaze can be spread on the cooled doughnuts, and a thinner glaze can be applied by dunking the doughnuts in it. Sprinkle with gluten-free shaved chocolate, chocolate sprinkles, or mini chocolate chips if desired.

Jeanine, when feeling down, remember there are thousands of GF folks here on the other side of your computer who literally have been given back their sanity and dignity as a GF baker because of your generous sharing recipes so we don’t have to fail anymore. Until I tried your recipes I kept failing at bread baking after 50 yrs. baking 5 loaves of wheat bread every week. Now I always have something in my kitchen I have made from your recipes.

I can be your friend! Made these just now! The peanut butter glaze is great. I used my mini doughnut cooker as I have one. It made 30 of those in case anyone else will use that little machine. So good, peanut butter and chocolate in minutes!

I don’t have a donut pan so was going to try these using a muffin pan. Then couldn’t find the muffin pan so used a 8in square cake pan. Ended up with a delicious chocolate cake that tasted just like the chocolate donuts I’ve been craving. And that PB glaze is perfect. Thank you for such a great recipe. And I’ve found the muffin pan to use next time.
