Add some flavour and sunshine to your leftover turkey with this easy Turkey Mango Salad.
As I type this, the strong north winds are pushing the flying snow past my windows. Yes, it’s spring in Manitoba. I won’t complain though, we’ve actually had very little snow for the last month, but these last few days, the temperatures have dropped and things seem that much colder, darker, and drearier instantly. My secret to survive this Manitoba spring is to draw the blinds, ignore it, and enjoy this Turkey Mango Salad that is loaded with the tastes of summer.
The turkey breast is teamed together with sweet mango, red onion, red pepper, lime, cilantro, and a kick of jalapeno pepper. In the past, whenever I had leftover turkey meat, I’d make some standard turkey salad (the kind with mayo, celery, onion powder, etc) or a simple Waldorf salad. Old standards that you don’t need much creativity to put together. When Tasty Turkey asked me to create a salad recipe using turkey though, I put on my thinking cap. I had seen some sweet, ripe mangoes at the store, and knew I wanted to incorporate them.
Did you know that it is really easy to peel a mango? I came across this video on Facebook, and it worked beautifully. I just used a 500 ml wide mouth canning jar instead of a glass.
If you don’t have leftover turkey to use in this recipe, you can easy poach a turkey breast in gluten-free turkey or chicken stock until the internal temperature reaches 170 degrees F.
