With all the fruits that are in season now, it is a good idea to take advantage of it. I have never really eaten mangoes before. I tried them for the first time last year, and this year, have had quite a few. Once you figure out how to peel & dice them, they really aren’t so intimidating anymore.
This super simple Mango Topping, which we ate on ice cream, would have been great on white cake too. Although the flavour was really good, next time I think I would add either some scraped out vanilla bean, or some rum to it while frying it up. But, as is, it was really delicious as well.
Mango Topping
Ingredients
- 3 cups mangoes, peeled, seeded and chopped
- 1 tablespoon butter
- 1 tablespoon brown sugar
- 1 teaspoon lemon juice
- 1 teaspoon orange juice
- 3 tablespoons water

Ya know, I wish I knew why I never had a mango before last year. When I was young, I was a very picky eater, and we didn't have a great variety of fruits & veggies either. I have still never tried brussel sprouts or artichokes, papaya or pomegranate. So many things to try yet! 🙂

I love to use mangoes in a Jamaican Jerk Chicken Salad recipe. A really tasty/easy summertime dinner. Yum! (I think I sent that one to you last year…)

I have learned to love mangoes and I add them to chicken stir fry..yummy!
