Are you enjoying ice pop week? Have you entered to win your own ice pop kit yet? I’ve enjoyed coming up with all these different flavour combinations to share with you. First we had Blackberry Key Lime Yogurt Pops, then kid-friendly Pina Colada Pops, and yesterday was those decadent Chocolate Dipped Peanut Butter Popsicles. My daughter has declared today’s Strawberry Rhubarb Pops as one of her favorites, but really, I think she’s having a hard time deciding. She says that the taste like strawberry rhubarb jam. I’d say that’s a pretty good comparison. These pops are really simple to make, bringing together the great flavours of summertime strawberries and young, crisp rhubarb. The balsamic vinegar is the kicker, adding some nice depth to the flavours. Now I wonder what flavour tomorrow will bring?
Strawberry Rhubarb Pops
Freeze for at least 4 hours, or overnight. To store frozen pops, remove from mold, wrap individually in plastic wrap, and place in a resealable plastic bag.
Ingredients
- 1 1/2 cups chopped rhubarb
- 1 1/2 cups chopped strawberries
- 1/4 cup water
- 1/3 cup granulated sugar
- 2 teaspoons balsamic vinegar
- 1 can (355 ml) Sprite, 7-up, or club soda
Instructions
- Place the first 4 ingredients into a medium saucepan. Simmer over medium heat stirring occasionally, until the rhubarb is tender. Allow to cool to room temperature.
- Spoon cooked mixture and balsamic vinegar into a blender. Blend until smooth. Stir in the Sprite or 7-Up.
- Pour into ice pop molds or paper cups. Insert sticks and freeze for at least 4 hours, or overnight.
- Run molds briefly under warm water to release pops.

Wow, that is one of my favorite combinations. I just made 2 strawberry rhubarb pies, but never would have thought to make strawberry rhubarb Pops. Might be nice and creamy without the vinegar and with heavy cream instead of the can of soda. You definitely got me thinking. Sounds super YUMMY!
