Ice Pop Giveaway Week continues, and it’s finally the last day of school for my little ones. Schedules can be put to rest for a while, they can play all day, until they are so tuckered out, I will be begging them to sit and watch a movie for a while, just so they get a rest in. I mentioned the idea of Summertime Bucket Lists to them, a list of things they’d like to complete during this summer, hoping that would motivate them to actually DO things with the short two months off. They each have a short list, but we’ll see if we can keep motivated to keep adding new things as items are crossed off the list. Hopefully we’ll all have some fun adventures along the way. Do any of you do Summertime Bucket Lists, or a “I’m Bored” jar, filled with silly ideas for the kids to do when those awful words are uttered? Now onto the pops – these creamy pops are loaded with peanut butter flavour, dipped in a chocolate coating, and sprinkled with salted peanuts. A flavour match made in Heaven. I LOVE all things peanut butter. I think during the summer months, the kids & I will devour all things peanut butter, since they have a nut free school, and haven’t been able to indulge in PB & J sandwiches much the last 10 months. I just bought a large container of peanut butter – Bring on summer, I’m ready!

Chocolate Dipped Peanut Butter Popsicles
Freeze for at least 4 hours, or overnight. To store frozen pops, remove from mold, wrap individually in plastic wrap, and place in a resealable plastic bag.
Ingredients
Peanut Butter Popsicles
- 2/3 cup peanut butter (I used Kraft Smooth peanut butter)
- 1 1/2 cups milk
- 1 cup heavy cream
- 1 teaspoon vanilla extract
- 1/3 cup brown sugar
Chocolate Coating
- 3/4 cup semi-sweet chocolate chips
- 1 tablespoon butter
- 1 tablespoon peanut butter
- 1/3 cup finely chopped peanuts
Instructions
- Place all ingredients in a blender. Blend until smooth.
- Pour into ice pop molds or paper cups. Insert sticks and freeze for at least 4 hours, or overnight.
- Run molds briefly under warm water to release pops.
- Place pops on wax paper lined baking sheet and place in freezer while preparing the chocolate coating.
- In microwave safe bowl, melt chocolate chips and butter at 50% power in 1 minute increments, stirring in between, until completely melted. Stir in the peanut butter. Place melted chocolate mixture into a narrow bowl.
- Remove five of the pops from the freezer, and dip the top of the pop in the melted chocolate. Immediately sprinkle with chopped peanuts. Return dipped pops to the freezer until chocolate has set. Repeat with the remaining pops.
Notes
If the chocolate becomes to thick to work with, you can reheat it in the microwave (at 50 percent power), and add a teaspoon of oil until the chocolate has the consistency you require to dip.

Hi Juanita, I haven’t made it dairy free, but you could try to do so using your favorite dairy free milk, or coconut milk.
