If you currently reside anywhere in the northern hemisphere, the weather outside may be frightful. This morning we woke up to -44 degrees with the windchill (that’s Celsius, not like it really matters at that point). I’ve read that the temperatures here have actually been colder than the temperatures on Mars. How crazy is that? Besides wearing an extra pair of socks and an extra sweater, we also like to keep warm by eating a hearty, warm meal. This gluten free Turkey Stew with Cornbread Dumplings is the perfect soul warming meal for those of us experiencing the arctic deep freeze. This is a recipe that I developed for the Turkey Farmers of Canada. They added a new collection of Comfort Food recipes to their website, any of which would be the perfect way to get through these cold January days. (Be sure to read all the ingredients, the Comfort Food recipes are not all gluten-free, however, the Gluten Free collection is.)
Although I made this dish on the stove top, it would be just as easy to adapt it to bake in a casserole dish/roaster, or even toss it in the slow cooker. If you are looking for ways to use up leftover turkey, this stew would be perfect to prepare using leftover turkey as well.
