The need for more appetizer recipes is always there. Whether it be for entertaining, game food, or those days when you just like eating small nibbles, these Potato Topped Turkey Meatloaf Bites should be coming out of your kitchen soon.
Since my celiac diagnosis, one of the things I miss during the holidays is the appetizers. I miss the ease of buying the boxes that had a variety of frozen appetizers in them. Simply pop them in the oven, and in a few minutes, you have a cute appetizer platter. We never bought those things any other time of year, I seldom bought processed frozen food before having to eat gluten-free, that was just a holiday splurge that we did.
Today, things look a little different. We still have nights leading up to the holidays where we put together a few appetizers instead of dinner, it just takes a bit more prep and planning now. But these Potato Topped Turkey Meatloaf Bites – they are definitely going to be on the table the next time we do an appy night. Not only are they cute, with the piped on mashed potatoes, but they are full of such great flavours. The potatoes are silky smooth with the addition of goat cheese and green onions. The meatloaf itself has a little surprise with the addition of chopped dried cranberries. Definitely great finger food. Better than anything you can get from a box.
