I like this recipe, simple and nutritious. Black beans and corn look so bold against the neutral quinoa. We eat a lot of salsa chicken in my home and have never found the right accompaniment. This salad may fit the bill nicely.

I have definitely eaten quinoa before, but am just realizing that I have never cooked it myself!!

I only found this recipe last year as well and have made it many times since. We love it! I even got my meat and potatoes mil to love it! and she hates onions! Really amazing side dish or great with grilled chicken mixed in.

This salad sounds great. I love quinoa but I've been on a little break! I tend to overdue it 🙂 I feel like you can never have enough quinoa recipes! Thanks.

I made this last night and it is SO good! I changed the recipe and added 1 tsp of cayenne pepper because I LOVE spicy food! I’m eating this for lunch today and I’m so excited!
This was my first time cooking with Quinoa and it was SOO easy! The grains look so cool too!
