Some people complain of a bitter taste from their quinoa. It is a good idea to either soak your quinoa for 10 minutes, and drain before using, or rinse in a fine mesh strainer until the water runs clear. This should eliminate that problem.
Quinoa and Black Bean Salad
Ingredients
- 1 teaspoon vegetable oil
- 1 small onion, chopped
- 3 cloves garlic, minced
- 3/4 cup uncooked quinoa
- 1 1/2 cups gluten-free vegetable broth
- 1 teaspoon ground cumin
- 1/4 teaspoon cayenne pepper
- salt and pepper to taste
- 1 cup frozen corn kernels (I used one small can, drained)
- 1-15 ounce can black beans, rinsed & drained
- 1/2 cup chopped fresh cilantro

I like this recipe, simple and nutritious. Black beans and corn look so bold against the neutral quinoa. We eat a lot of salsa chicken in my home and have never found the right accompaniment. This salad may fit the bill nicely.

I only found this recipe last year as well and have made it many times since. We love it! I even got my meat and potatoes mil to love it! and she hates onions! Really amazing side dish or great with grilled chicken mixed in.

I made this last night and it is SO good! I changed the recipe and added 1 tsp of cayenne pepper because I LOVE spicy food! I’m eating this for lunch today and I’m so excited!
