Enjoy a cup of coffee with these baked Gluten Free Chocolate Mint Doughnuts. Omit the green colour from the frosting, and sprinkle with crushed candy canes instead for a holiday treat.

I’m not really one to celebrate Saint Patrick’s Day. I have no Irish background. We never celebrated as kids. The extent of our ‘celebration’ is wearing green, and eating something green. Pretty simple. :) So, this past week when I looked at the calendar and saw that it was St. Patrick’s Day this weekend, I knew I had to make something green to go with the occasion. I decided to make some baked Gluten Free Chocolate Mint Doughnuts. My kids loved them, and apparently the kids in their class were quite envious come lunch time. Nearly started a brawl – so I guess they are kind of Irish, huh? 😉

Gluten Free Chocolate Mint Doughnuts

Ingredients
Chocolate Doughnuts
  • 1/2 cup brown rice flour
  • 1/4 cup sorghum flour
  • 2 Tablespoons potato starch
  • 1 Tablespoon tapioca starch
  • 1/2 teaspoon xanthan gum
  • 2 Tablespoons dry instant chocolate pudding mix (or dry milk powder)
  • 3 Tablespoons cocoa powder
  • 1/2 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2 large eggs
  • 1/4 cup oil
  • 1/4 cup milk
  • 1/2 teaspoon apple cider vinegar
Mint Frosting:
  • 1 1/2 cups confectioners' (icing) sugar
  • 2 Tablespoons unsalted butter, softened
  • 2 Tablespoons milk
  • 1/4 teaspoon mint extract
  • 4 drops green food colouring
  • 2 Tablespoons mini chocolate chips
Instructions
Chocolate Doughnuts
  1. Preheat your oven to 375°F. Lightly grease a Doughnut Pan.
  2. In a large bowl, whisk together all of the dry ingredients.
  3. In a smaller bowl, whisk together all of the wet ingredients.
  4. Pour the wet ingredients into the dry ingredients and stir until fully combined.
  5. Spoon mixture into prepared doughnut pan. Bake in preheated oven for 10-12 minutes, or until a toothpick inserted into the thickest part of the doughnut comes out clean.
  6. Let doughnuts sit for 5 minutes before turning them out onto a cooling rack. Allow to cool completely before frosting.
Mint Frosting:
  1. In a small mixing bowl, beat together all ingredients (except the mini chocolate chips).
  2. Frost cooled doughnuts, and sprinkle with the mini chocolate chips.

    These look amazing and I love the green mint frosting. I’ve never had a mint doughnut but sounds delicious. I bought myself a donut pan for the sole purpose of making gluten free dounuts and have only used it once. I will have to dust it off and give this a go!

    After my brother showed up with Chocolate Cake Donuts from Krispy Kreme, I had a hanckering for these donuts! I found them on your site and figured I’d give them a try. I decided to use just a simple glaze instead of the mint (however I may try that next time). They were DELISH!!! I had to leave the house so I wouldn’t eat all 6 at once! Thank you SO MUCH for this recipe. It was super easy and delicious.
