These mashed potatoes are really kicked up a notch! They include your other vegetables, as well as a great garlic flavour. The hidden kick comes from the jalapeno pepper that is cooked together with the vegetables. We really enjoyed this version of mashed potatoes, and I hope you will too! 🙂

1 pound red potatoes
1 pound Yukon Gold (yellow) potatoes
1 fresh jalapeno pepper, sliced
12 ounces baby carrots
4 cloves garlic
1 (10 ounce) package frozen white corn, thawed
1/4 cup butter
1/2 cup milk
1/2 cup shredded Cheddar cheese
salt and pepper to taste
Directions:
1. Place red potatoes, yellow potatoes, jalapeno pepper, carrots and garlic cloves in a large pot. Cover with water, and bring to a boil over high heat. Cook 15 to 20 minutes, or until potatoes are tender. Drain water from pot.
2. Stir in corn, butter and milk. Mash the mixture with a potato masher until butter is melted and potatoes have reached desired consistency. Mix in cheese, salt, and pepper. Serve hot.

Thanks for all of your sweet comments today, Jeanine. Brendan IS a cutie — with very “pinchable” cheeks. My older two were/still are long and lean lightweights. Brendan’s our little tank. Isn’t it funny how they’re all so different?

Colleen, your boy must be just trying to catch up with the older 2, packing on the lbs so he can join in the fun. 🙂 I’ve heard of heat in the US, but we’ve got cold & rainy. ICK! The rain part is OK, but not 5 days straight!
Dawn, the “kick” comes from the jalapeno pepper that you add in, so the less pepper, the less kick. But, we really liked these, nice alternative to plain mashed potatoes. 🙂
