Well, spring is arriving here. Our snow (on our yard) is nearly all melted. Woohoo! Today is actually a dreary, cloudy, rainy day. The perfect day to use your slow cooker! Dig it out, you won’t be disappointed with this Slow Cooker Chicken Taco Soup. 😉
Slow Cooker Chicken Taco Soup
Ingredients
- 1 onion, chopped
- 1 (16 ounce) can chili beans
- 1 (15 ounce) can black beans
- 1 (15 ounce) can whole kernel corn, drained
- 1 (8) ounce can tomato sauce
- 1 1/2 cups gluten-free chicken broth
- 2 (10 ounce) cans diced tomatoes with green chilies, undrained
- 1 (1.25 ounce) package gluten-free taco seasoning
- 3 whole skinless, boneless chicken breasts
- shredded cheddar cheese (optional)
- sour cream (optional)
- crushed tortilla chips (optional)

Question..did you use the liquid in the beans or did you drain those too?

I don't think the recipe calls for draining & rinsing, but I usually do. I don't like the bean liquid, especially with black beans (too muddy looking).

So glad that you gals are liking this soup. The entire family gobbled this one up. It has a nice hint of Mexican food, but it’s not hot. I guess you could make it hot if you wanted, but we liked it just the way it was. 🙂 Apparently you can use beer in place of the chicken broth, but since it’s not GF, I didn’t bother with it.

do you put the chicken in raw or do you have it cooked before hand…this recipe looks delishes im going to make it tomorrow and i am new to your page can;t wait to see what you post next I love to cook

Tennille, you put the chicken in frozen, and then about 1/2 hr before you serve it, you remove the chicken & shred it before returning it back to the soup. My family really likes this soup, and just finished off a pot of it last week.

Is the taco seasoning gf? I’ve not looked at them yet, but all the chili seasonings I’ve looked at have gluten in them.

It is gluten-free, you’ll have to double-check your ingredients for soy, but I don’t think it should be a problem there either.
