I understand that some of you have kids back at school already. We have another 15 days of summer vacation left. The kids have started counting down, but I’m not sure if it’s out of excitement for the coming year, or dread at summer ending. It seems like we were just counting down the days until summer vacation. Crazy!
Whether you’re trying to take advantage of the last few weeks of summer with a picnic, or looking for something new to pack in the lunch kits (the kid’s, or yours), you should definitely give these Cajun Turkey Sandwiches a try. I served them on my favourite gluten free Millet Sandwich Bread, the only one I bake these days. I love how well that bread holds up to things like Baked French Toast or big, meaty sandwiches.
These sandwiches are really easy to make. Take a few minutes to cook the turkey breast, and keep it in the fridge until you’re ready to prepare your sandwiches. We topped ours with some mayo, lettuce, tomato, and avocado, but feel free to switch it up to suit your taste.
