Carrot Apple Salad | The Baking Beauties

 

First off, HAPPY NEW YEAR!! I trust you all had a great holiday season, spending time with family & friends. We had our first snow storm of the winter on the 25th & 26th. Perfect timing, huh? Sheesh! So, some Christmas gatherings had to be rescheduled, but it all worked out.

I also want to say THANK YOU to each & every one of you that has emailed me and left me comments. I really, really appreciate it. I haven’t found made time to respond to all of the comments & emails yet, but that doesn’t mean they aren’t appreciated. This blog is simply a way for me to share recipes with others, some celiacs, some not. It is a very rewarding hobby for me, to hear all about how these recipes are impacting your lives, and the lives of those around you. To get an email from a reader saying that their teen just wanted to be “normal” for a change, and how sweet & sour chicken balls did it for them that day. Or how the crustless pumpkin pie, as simple as it is, completed a lot of Thanksgiving meals this past year. Amazing. So, THANK YOU, everyone that reads this, and to those that take the time to write a brief note, I truly appreciate it!

This coming year, I will post more recipes, and healthier recipes. Although sweets will always be a part of this blog, I want to include more “regular” gluten free recipes as well, something that you can make if you’re having a person with celiac disease over for dinner. And as always, if there is a recipe you are looking for, email me, I love a challenge, and will see what I can do for you.

Alright, enough with the chatting (although I could go on, it seems), let’s get on with today’s recipe! This is a simple Carrot Apple Salad, that everyone in my family loved. It takes a very little time to put together, better if it’s done in advance (or even the day before), and healthy, since it is raw, and you haven’t cooked out any of the nutrients. My kids loved it, and cleaned their plates off, it was a thing of beauty. ๐Ÿ™‚

By the way…carrots are NOT very photogenic, in case you were wondering.

Carrot Apple Salad

Carrot Apple Salad

Ingredients

  • 2 medium tart apples
  • 3 cups shredded carrots (gotta love how easy a food processor makes this)
  • 3 tablespoons raisins
  • 3 tablespoons flaked coconut
  • 1/2 cup toasted almond slivers
  • 1/3 cup fat-free, reduced-sugar vanilla yogurt
  • 1/3 cup fat-free, reduced-sugar pineapple yogurt (or plain)
  • 3 tablespoons reduced-fat mayonnaise or salad dressing
  • 1 tablespoon lemon juice
  • OPTIONAL - 1 (8 ounce) can unsweetened crushed pineapple, drained

Instructions

  • In a large bowl, combine the yogurts, mayonnaise, and lemon juice.
  • Add the apples, carrots, raisins, coconut & almond slivers.
  • Toss to coat. cover and refrigerate for 3-4 hours or until chilled.

      I think it looks so bright and healthy. For some reason I've never thought of a carrot salad to pump into the kids. I'm thinking they will eat this up without any complaints. Thank you!

      Jeanine..this recipe looks wonderful..it reminds me of a carrot salad that my Mom used to make.
      By the way..did you ever get that visit from the welcome wagon lady??

      tallmisto, you'll have to give it a try. My kids loved it, even though one picked out the raisins. Ah well, nearly perfect, eh? ๐Ÿ™‚

      Betty, yes, the welcome wagon lady did come! Quite a while ago, but I forgot to tell you. she actually wanted to come twice. ๐Ÿ™‚ How's that for welcoming? lol "Cateract" as a verification word, eh? Guess it could be worse! lol Had to add the verification thing, spam was happening way too often. ๐Ÿ™
