I was so impressed with this recipe, I just had to share. It is a recipe that I got from AllRecipes.com, I don’t think I even changed it up at all. And that is very uncommon for me, I usually have to change a recipe. This one, however, looked perfect to me on paper, and on my plate as well. We really, really enjoyed it. Topping your fish was salsa is a fantastic way to get a healthy protein, plus more fruits/veggies into your diet. If hope you’ll give this quick dinner a try sometime, I don’t think you’ll be disappointed.
Grilled Tilapia with a Mango Salsa
Ingredients
- 1/3 cup olive oil
- 1 tablespoon lemon juice
- 1 tablespoon minced fresh parsley
- 1 clove garlic, minced
- 1 teaspoon dried basil
- 1 teaspoon ground black pepper
- 1/2 teaspoon salt
- 2 (6 ounce) tilapia fillets
- 1 large ripe mango, peeled, pitted and diced
- 1/2 red bell pepper, diced
- 2 tablespoons minced red onion
- 1 tablespoon chopped fresh cilantro
- 1 jalapeno pepper, seeded and minced
- 2 tablespoons lime juice
- 1 tablespoon lemon juice
- salt and pepper to taste

This does look amazing. And I am totally like you. I rarely make a recipe as written. Not even sure why, except that I think I am just bad at following directions and just like to try and get creative.:)
