Raspberry White Hot Chocolate
Make a Raspberry White Hot Chocolate for a quick, fun treat for your sweetie this Valentine’s Day.
Ingredients
- 3/4 cup (180 ml) raspberries (if frozen, allow to defrost)
- 2-3 tablespoons (30-45 ml) granulated sugar
- 1 1/2 cups (375 ml) milk
- 1/2 cup (125 ml) heavy whipping cream
- 1 teaspoon (5 ml) cornstarch
- 2 oz. (about 1/3 cup or 80 ml) gluten free white chocolate (finely chopped)
- pinch of salt
- whipped cream to garnish (optional)
Instructions
In a small bowl, mash together the raspberries and 2-3 tablespoons sugar, depending on how sweet you like your hot chocolate. Set aside for a few minutes.
In a small heavy bottom sauce pan, whisk together the milk, cream, and cornstarch over medium-low heat. Continue heating until the mixture begins to steam, but does not come to a boil. Turn off the heat once the milk is simmering.
Push the raspberry mixture through a mesh strainer to remove the seeds.
Add the raspberry juice, white chocolate, and salt to the milk mixture. Continue to stir until the white chocolate has melted.
Divide between two glasses, and top with lightly sweetened whipped cream (optional).
Notes
After the Raspberry White Hot Chocolate has sat for a while, you will notice a yellow line appearing on the top of the drink. No worries - that is due to the cocoa butter in the white chocolate. It still tastes delicious.
